We recently attended several cooking classes at the Cook Academy located at the Essex Resort and Spa. For the first class, which was taught by Chef Donna, we were the only participants and we prepared Spicy Sausage, Escarole & White Bean Stew, Roasted Butternut & Spinach Quiche, a small salad and Apple Crisp. It was a large and scrumptious meal! The second class, also taught by Chef Donna, had a larger group of aspiring cooks and focused on preparing Pork Au Poivre, Garlic Smashed Potatoes, gougรจres, grilled asparagus and French Apple Cake. Naturally, there was a difference between the experience of the one on one instruction of a small class and that of a larger and more boisterous group. However, in both settings I marveled at Chef Donnaโ€™s knowledge, skills and adaptability. Her responsiveness to cooks at so many different levels was admirable and each participant was given an opportunity to learn new skills and techniques that built upon their abilities. I particularly enjoyed experiencing a more relaxed approach to cooking - being somewhat obsessive in my own kitchen can really take the joy out of cooking. My current goals are to keep practicing the knife skills that Chef Donna helped me with until I can chop and mince with skill and expedience and to always blanch my asparagus before grilling to obtain an appealingly bright green color!
We are looking forward to returning and taking more classes in the future.

I had a great time at the cooking class. The instructor was very knowledgeable. The other members were very friendly and we functioned well as a group to produce a scrumptious meal. I highly recommend the cooking with beer class with Chef Evan.
