I took the BYOB: Bring Your Own Brisket class from the Utah Meat Collective and it was such a great experience. We were taught how to pick out a brisket, how to trim and season the brisket and how to cook it with a smoker. It was so informative and entertaining! Tom and his guest lecturer Joe answered any and all questions and were a wealth of information. I had never smoked meat, but I did successfully smoke a beautiful and delicious brisket because of that class!! I would highly recommend the Utah Meat Collective for all your meat cooking needs!!

I thoroughly enjoyed the 1/2 half hog butchering class. Tom is very personable and easy to talk to. He obviously knows what he's talking about and explains things in a way to make sure you understand. The demonstration was up close & personal and easy to see what was being done & explained. The small group setting makes it feel more 1 on 1. I was very impressed. I will most definitely be returning for additional classes. Well done Tom!

Attended a beef culling/ butchering class on a Saturday that went from 9 am to about noon. It was a great class! If you want to learn more about the food we eat, sources of beef, people that produce and butcher it, and about prepping an animal for consumption, this is a great place to start. The owner was very welcoming. There were men, women, and people with various interests attending. Great job

I took the sausage-making class from Tom. It was a fantastic class. Tom was informative and professional. The class size was small enough to get good interaction with Tom and to get hands-on experience with the process of making sausage. The facility was clean and tidy. Can't wait for my next class. Highly recommend.

3rd class with Tom and it was as awesome as the first! This one was all things brisket with the help of his brisket-master friend Joe. Great class. Already looking forward to my next class!
